THE FRUIT

We're harvesting apple's and other fruits direcly next to our location. And get more fruits from local organic farmers, which still have old varieties in their stock. These old varieties are interesting for us and for the using it in our ciders because of their special flavour.

 

THE JUICE

The fruits get sorted, washed and mashed. We're processing every variety by its own. After some hours, up to days, we press the skin macerated pulp.

THE FERMENTATION

Pét Nat Cider

The must is filled into large tanks and fermented with the natural yeast that sits on the skins of the fruit. In end of season we start to blend the different single variety musts. To create an aromatically balanced cuvée or expanded as a pure variety.

THE BOTTLE

If carbon dioxide is desired, the fruit wine goes into the bottle during fermentation. There, fermentation progresses continues and produces carbon dioxide. We use stable champagne bottles that can handle the pressure.

THE IDEA

We started this project 2019 in Hamburg.

In 2022, we moved to the beautiful Schaalsee area and work cooperative with a little fruit farm.

We make cider's, vinegar and other refreshing no abv proxie drinks by reinterpreting and combining techniques from cuisine, viticulture and cider traditions. As far as possible, we avoid all unnatural additives.


We dedicate ourselves to this project with joy, attention and craftsmanship.
