POMQUETTE
The French winemaking traditon of "Piquette", which is basically a thin wine that is created by infusing the pomace with water and using the pomace a second time. The resulting light, watery wine was given to the helpers as a refreshment in the vineyard for motivational purposes. We use this method for apple pomace.
Cause we use apples (French: pomme), we simply call this process “pomquette” to keep the French language origin.
There are also other ingredients, techniques and methods to give the watery fruitwine a more interesting profile.

We used a Elderflower tea to rehydrate the pulp and pour in some honey to increase the sugar level. Adding elderberries to get this lovely color and flavor.
Bubbly fresh with floral and light notes of cherries, elderberries and wild berries.

We used a Rose tea to rehydrate the pulp and pour in some honey to increase the sugar level. Ageing on rosehip puree.

We co-ferment apple pomace with plum und sloeberries.
Bubbly and full of plum notes with tart sloeberry tannin.

We bottled a bit too late, so it’s just slightly fizzy. With fresh citric hop aroma, as well like Passion-fruitiness and Grapefruit.

Here an aromatic tea was used instead of water to pour on the marc. We use the blossom and berries of elder and add honey.
